Healthy thirst quenchers

WHAT CAN be most refreshing after a hot morning's shopping, an energetic game or a long swim in the sea? A cold icy drink is always the popular choice.

Soursop squash

1 medium sized soursop

Sugar to taste

1 cup milk (optional)

4 cups hot water

Little grated nutmeg

Wash and peel the fruit. Remove the heart and seeds. Crush with a fork and pour over the hot water. Allow it to stand until cool. Strain off liquid, sugar to taste, add milk if desired, stir in nutmeg and serve with ice or chilled. Serve at once in glasses with cracked ice.

Pineapple drink

Peelings from 1 pineapple plus 2 slices fruit

6 cups boiling water

Sugar to taste

Small piece dried orange peel

1/2 teaspoon grated nutmeg

Few cloves

Put peelings, cloves, and orange peel in a jug and pour on boiling water. Cover and leave for one day. Strain and sweeten. Sprinkle in nutmeg and stir. Use at once or bottle and keep for 1 or 2 days. Serve with ice.

Lemonade (1)

Juice of 2-3 large

Fresh green limes (strained) (about 1/2 cup)

4 cups water

1 cup granulated sugar

1/2 teaspoon aromatic bitters

Stir sugar with lime rind in water until sugar dissolves, add lime juice and bitters and stir well. Serve at once in glasses with cracked ice.

Lemonade (2)

Cook 1 cup sugar and 1 cup water 5 minutes to make a thin syrup; store in refrigerator. For each serving, mix 3 or 4 tablespoons syrup, 11/2 tablespoons lemon or lime juice, and 1 cup water. Pour into ice-filled glasses.

Tamarind drink

1 lb shelled tamarinds

4 cups hot water

2 cups brown sugar (or more)

Grated nutmeg

Soak tamarinds in hot water for 1 hour and scrape off pulp with a spoon. Add sugar, stir well and strain off liquid. Serve very cold with grated nutmeg. Aerated soda water may be added to make a more refreshing drink.

Pawpaw drink

1 medium sized ripe pawpaw

6 oz sugar

1 teaspoon grated ginger or

1 or 2 fresh limes

Slice, peel and crush a medium ripe pawpaw. To every pint of crushed fruit add water, stir thoroughly and strain. Sweeten to taste and chill or add cracked ice. A small bit of ginger, grated, or a dessertspoon of juice from fresh limes will improve the flavour. Mango drink may be made similarly.

Cherry or Gooseberry Drink

2 cups fruit

2 cups water (warm)

11/2 cups sugar

Wash fruit and crush. Add water and allow it to stand for 1 hour. Strain through a coarse sieve, and serve cold.

Coconut refresher

4 cups coconut water

2 cups grapefruit juice

1/2 cup sugar

2 tablespoons rum(optional)

Combine all ingredients and serve with ice.

Guava drink

1/4 teaspoon 2 cups guava puree (fresh ripe)

1 cup sugar

11/2 cups water

1/4 teaspoon salt

Combine all ingredients. Strain and chill thoroughly. serve with cracked ice. Ginger ale may be added at the last for variation.
